You know how sometimes people are put in your life at just the right time?
I have this blogging friend, Becky.
Becky and I have never met nor spoken in person.
She reads my blog occasionally.
Her comments are always helpful and insightful.
She was the one who taught me how to make my own baby wipes.
During my pregnancy, she encouraged me to take ownership of the medical care I was receiving.
Without even knowing it, she almost has me convinced to become a baby wearer with our next kid.
All that PLUS it turns out she cooks for someone who has a need for a diet similar to the one Husband has to follow.
Already her input has been invaluable.
Why?
Because she told me about Dream Fields pasta.
I admit, the first thing that flashed through my mind when we found out that Husband is diabetic is that my love affair with potatoes and pasta had to come to an end.
Oh, how sad I was.
I was even more devastated when I found that there are 3 carb points in like six spaghetti noodles.
Even when I read about Dream Fields, I didn't think their claims could be true.
I mean, really, how can you "protect" carbs so they don't digest in the small intestine?
How can you make a pasta that only has five digestible carbs that still tastes like actual pasta and not wall paper paste?
I read all of the diabetes forums I could find on the subject and after finding 90% positive reviews, I decided to make Husband a science project.
Husband just lurves to go along with any idea I have.
I made mac and cheese with Dream Fields noodles (penne).
We tested Husband's blood sugar, he ate a portion he would have eaten before we found out he has diabetes (which, had he been eating normal carbs, would have been approximately 8-9 carb points), and then two hours later, we tested again.
Guess what?!
Just guess.
Not only was there no spike in his sugar, it was the lowest reading he's had since he's been home.
And it tasted just like regular pasta.
No, really, it did.
Please allow me some more time to rejoice and glory in modern technology...or food...or whatever.
In a couple of years, someone will probably complete a study that says protected carbs cause cancer*, but right now I don't even care because.....
We can have pasta, we can have pasta, we can have pasta!
Up next: a suitable potato substitute.
*Husband says that if they do cause cancer, we'll make millions by getting in on the class action law suit, so no biggie...

Erin, you make me laugh. But on a serious note- pasta substitutes aren't bad at all. I haven't tried the one you did, but I had to find gluten-free options that didn't taste like cardboard. Our normal grocery store carries asian pastas made out of like sweet potato, black rice, buckwheat and there is a carrot ginger one.
I am not kidding when I tell you that we will never go back to eating regular pasta now that I can. The new stuff is WAY too tasty.

I'm so glad the pasta worked for your hubby. Seriously though, buy some stock in Febreeze or those Glade candles...The after affects are... odiferous.
As far as potatoes go,the best I can offer is steam the crap out of some cauliflower (cut it really tiny). It takes forever. Do it until it's practically mush. Then mix with a tiny bit of actual potato and some butter and salt and you can pretend that you're eating mashed spuds. Well, you can if your imagination is REALLY good, or you use gravy.
