Out of the Funk

I had a bad day yesterday.  Here are some things that got me out of the funk:

1.  I actually got locked into work yesterday.  I went to the bathroom right before 5 (because I'm like an old lady and have to go to the bathroom before I go anywhere for fear that I'll lose bladder control during the drive).  When I came out, everyone was gone and all the doors were locked.  I have no key to let myself out so I had to sneak around the back way - which incidentally, goes right through the men's bathroom. 

2.  I found chocolate graham crackers at the store.  I've been looking for some for months, going into a deep depression when I couldn't find them, thinking Nabisco had stopped making them all together.  When I got to the check out stand, I might have gotten overly excited about my purchase and gushed for at least five minutes about chocolate grahams.  The checker was thrilled with my exuberance.

3.  Boaz Jr. is back.  He used to have a tail twice as long as his body, but now he just has a little tail nubbin.  I would feel sorry for him except he was hiding in my cucumber plant and scared me half to death.

4.  The NCAA Men's Volleyball Tournament was on ESPN last night.  There's really nothing better than men's volleyball.

5.  Husband volunteered to make a cake to auction for the Boy Scout camp fundraiser tonight.  However, since he had a whole lot of homework to do, I ended up making it.  He chose an Emeril recipe for chocolate cheesecake (the batter was delicious...how I know that, I will not reveal).  When I threw it in the oven around 9 pm, Husband said he'd take it out for me so I could go to bed. 

This morning I looked in the fridge to find my cheesecake, which looks like someone threw up on it.  I said, "Hey, what happened to the cheesecake?  It looks gross."

Husband said, "Well, it kind of....exploded."

I have no idea what I did wrong (other than over filling the pan), but we now face the task of making it presentable enough for someone to want to buy it.  Any ideas?  I mean, other than staying at home and eating it ourselves?  Because right now, that's plan A - and it's looking better and better with each passing hour.

you should try the chocolate goldfish! they are yummy!! they are technically Landon's snack, but I cant resist, I end up eating the majority of them.

Chocolate Gnauche on top. It dries pretty smooth and tastes even better!

Top it with chocolate sauce, pie filling or chocolate and fresh fruit! No matter what it looks like, I bet it tastes wonderful!
