Chicken Cordon Bleu. Here's the recipe (thanks to Amanda, another person I stalk unbeknownst to her...).
I've wanted to learn to make this for years but have always been super intimidated. This recipe is so easy - and fast, too! Look out, Rachael Ray!
And as long as you're making it, go ahead and double or triple it. It is the most delicious leftover ever - this coming from the girl who loathes leftovers.
We didn't use her mashed potato recipe - Husband just whipped up some of his famous garlic mashed taters.
Seriously.
Try it.
You'll be glad you did.

I thought this looked so good, so I checked out the blog. I ended up making the Bacon Cheeseburger Chicken. Woah, yum. Woah, bacon. But the yum just erases any feelings of guilt from the gobs of bacon grease, cheese, ranch, you name it. Very good. I'll be trying the Chicken Cordon Bleu soon. Thanks for the tip.
