What's a Toe Here and There?

Diabetes suuuuuuucks.

I mean, like I know it's a disease and it messes up your body and stuff.

Going blind.

Loosing toes.

And that's bad.

But it's not the worst part.

No, the worst part is the counting.

Fifteen grams of carbs equals one carb point.

Husband can have eighteen carb points a day.

Ten starches, four fruits, two dairy...

I've only been counting for three days and already I'm sick, sick, sick of it.

Serving sizes, carbs, fats, fiber...

Tonight we had meatloaf with mushroom gravy, a teeeeny bit of rice, and a side of green beans and onions.

Or, in other words, we had a side of where the hell are the mashed potatoes?

Are you aware that one red potato has 29 grams of carbohydrates?

Ugh.

Do we really have to give up all potato products??

Just thinking about that makes me think I'd rather keep eating them and lose a few toes.

Of course, it would be Husband's toes we'd be losing, and yes, that's a sacrifice I'm willing to make.


Speaking of toes, Carolyn dropped a beef bullion jar on my left big toe this evening.

Holy crap, it hurt.

About 30 minutes later, she dropped an old cell phone on the exact same spot.

I'm going to have to start wearing steel toed boots 24-hours a day.

Sweet potatoes have a glycemic load of 17 vs the 29 in a russet potato. I guess that's only good if you happen to like sweet potatoes...

If you steam and mash cauliflower and add some garlic, it fakes mashed potatoes like a bad Halloween costume. But it tastes good.

I totally feel your pain on measuring and counting everything! It gets way old and sucks! I had to do it for both pregnancies! I had no clue how many carbs were in everything. I was allowed more than Nick though - probably because I was pregnant and the baby needed this and that...Or your Nutritionist is just a meanie!!

Hey let me give you michelle's number. She's a nutritionist and can help simplify things and maybe even get you some great recipes. If it all helps, my aunt was diagnosed with diabetes years ago. She thought it was a death sentence and that she'd never eat anything yummy again. But once you figure your body chemistry out, it becomes second nature and you don't have to count so much anymore. Knowing you and nick, you'll be experts in no time.
