This weekend Husband had his first weekend off since we got back from Nevada. In order to celebrate, we made a command decision to do NOTHING. That's right, we got up late, didn't answer phones...in fact, I don't think that Husband got off the couch for anything other than eating and short potty breaks.
And what did we do while we were vegging?? Three words for you: COLLEGE GAME DAY. I have no idea how many football games we ended up watching, but it was a lot, thanks to Husband's mastry of the remote and his amazing memory (because there is NO WAY I could remember which games are on what channel). It was not a very productive day, either. We rooted for all of the underdogs (yes, I even went so low as to root for Utah when they CREAMED UCLA), who only managed to win three games.
The best thing about the entire day besides getting to be together?? FAJITAS. That's right, people, we made the most delicious fajitas known to man. It might be the best fajita I've ever had in my entire life (thanks partly, I am sure, to my delicious guacamole that I also made). Here's the recipe for the chicken marinade we used, courtesy of Paula Deen:
2 tablespoons vegetable oil
3 tablespoons lemon juice
1 garlic clove, minced
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
Dash hot sauce (we put in a lot more than a dash)
Salt and freshly ground black pepper
1 1/2 pounds meat (boneless, skinless chicken breast)
Marinate in the fridge for 20 minutes (or I think about an hour if you want to use steak). Grill for about 5 mintes on each side (Husband swears by charcoal grills).
