As per request, here is my guac recipe...the trick is that there is no recipe. I just add stuff until I think that it tastes good (look out, Rachael Ray, here I COOOOOME). Here are the base ingredients I use:
2-3 avacados
salt and pepper to taste (generally just a couple of shakes of the salt shaker does it - freshly ground pepper is the best!!)
1 tsp. garlic (again, to taste)
1 small lime
pico de gallo (I buy it pre-made at the store. If they don't have it or if you don't like it, you can use diced tomatoes)
Peel, pit, and smash avacados, squeeze lime juice into avacados, add salt and garlic to taste. Stir in pico or tomatoes.
And that's it! Nothing to it. Just as a side note here, on the fajitas, don't skimp on the cheese and sour cream. If they're diet fajitas, there's just no reason to eat them.
